Our client is a well-established premium bakery manufacturer based in the Braeside area, specialising in artisan-style sourdough and crafted bread products.The business supplies major national retail customers and has built its reputation around quality, consistency and the craft of great bread. This is not a high-volume commodity bakery environment.

The focus is on premium bread products, strong technical standards, and maintaining product quality as the business continues to grow.This is a strong opportunity for someone who genuinely loves bread and wants to play a key role in developing products from idea through to production.
 
About the role  

We are seeking a Technical NPD Baker / Product Developer for a hands-on product development role focused on bread, sourdough and artisan-style bakery products.You will be involved in developing new products, improving existing ranges, working through formulation and ingredient trials, and taking concepts from the test kitchen into commercial production.The role sits between practical breadmaking, technical product development, production, suppliers and commercial stakeholders.

You will work in a dedicated test kitchen environment while also partnering closely with production teams to ensure products can be scaled and manufactured consistently.This role would suit someone who understands that making a great product on the bench is only part of the job. The real value is being able to turn that product into something commercially viable, repeatable and suitable for production.

What you will be doing:
  • Developing new bread and bakery products from customer briefs, internal ideas and market opportunities
  • Working hands-on across formulation, recipe development, bench trials and product testing
  • Improving existing products across quality, texture, consistency, flavour, shelf-life and production performance
  • Working with sourdough, bread dough, flour, yeast, fermentation, bread improvers, enzymes and other functional bakery ingredients
  • Partnering with ingredient suppliers on new ingredients, technical solutions and product opportunities
  • Taking products through production trials, line trials, scale-up and first production
  • Working closely with production teams to ensure products are practical, repeatable and commercially viable
  • Troubleshooting product or process issues and recommending practical improvements
  • Maintaining clear trial notes, development records and supporting documentation
  • Working with product, production, QA, commercial, supplier and customer stakeholders
You will have:
  • Strong hands-on experience with bread, sourdough or artisan-style bakery products
  • Experience in bakery product development, formulation, recipe development or product improvement
  • Good understanding of dough behaviour, fermentation, flour functionality and commercial baking processes
  • Experience with bench trials, production trials, line trials or product scale-up
  • Ability to troubleshoot product quality, consistency, texture or production issues
  • Confidence working with production teams and translating test kitchen work into commercial manufacturing
  • Experience working with ingredient suppliers, improvers, enzymes or other bakery ingredient solutions
  • Strong communication skills and the ability to work with people across different parts of the business
  • A practical, hands-on and commercially realistic approach
  • Genuine passion for bread, quality and product development
Formal qualifications in Food Science, Food Technology, Baking or a related discipline will be highly regarded, but strong practical technical bakery development experience is just as important.
